Thanksgiving & Holiday Catering in Miami: Drop-Off vs Full-Service (Costs, Portions, Timelines)

Every November, the same conversation happens in kitchens and offices all over Miami. Someone agreed to host. Now it’s real, the guest list has grown from twelve to thirty, and cooking it all yourself has quietly stopped being an option.

So you look at catering, and you hit a fork in the road almost immediately: drop-off or full-service? The price difference is big. The experience difference is too. And most catering websites won’t tell you plainly what each one actually costs or how much food you need, which is why people end up ordering for fifty when they’re hosting twenty-eight.

Here’s the honest version.

What Drop-Off Catering Covers (And What It Doesn't)

Drop-off is exactly what it sounds like. Our team cooks everything fresh in our Miami kitchen, packs it in serving trays, and delivers it to your door at a scheduled time. Hot food arrives hot, in disposable or returnable pans, with serving utensils if you ask.

Then we leave. That’s the deal.

You handle setup, serving, drinks, and cleanup. For a family Thanksgiving in a Kendall backyard or a low-key office lunch before the long weekend, that’s usually all you need. Grandma still gets to feel like the host. Nobody stands over a stove for two days.

What drop-off doesn’t include: staff, rentals, plating, or anyone to refill the mac and cheese when it runs out at 6:40. If your event has a start time, a program, or more than about forty guests, the gaps start to show.

What Full-Service Adds

Full-service means the food comes with people. Servers set up before guests arrive, keep buffet lines stocked, clear plates, and break everything down at the end. Depending on the event, that can also mean passed appetizers, carving stations, bartenders, and rented china instead of disposables.

Company holiday parties almost always belong in this category. So does Nochebuena for a big family, if the point of the night is that nobody in the family works it. We wrote more about what that level of service looks like in our private event catering blog.

How Much Food Do You Actually Need?

This is where most self-catered holidays go wrong, in both directions.

For a plated or buffet dinner, plan on about 1.25 pounds of food per adult across the whole meal. In practice that means:

  • Turkey: about half a pound of cooked meat per person, which works out to one pound per person on the raw bird because of the bone
  • Sides: 4 ounces per person, per side, with three or four sides total
  • Salad or soup: 3 ounces per person
  • Dessert: one serving each, plus roughly 10 percent extra

Kids under ten count as half portions. Teenagers count as adults, sometimes as slightly more than adults.

If you want leftovers, and at Thanksgiving most people do, order for two or three extra guests rather than upsizing everything. It’s cheaper and you end up with complete meals instead of a gallon of stray green beans.

The Deadlines That Actually Matter

Holiday catering runs on a shorter calendar than most people expect, so here’s a rough guide to how the season usually flows:

Late September and October is the comfortable window for booking full-service December events, especially if you have your heart set on a Friday or Saturday. Our corporate catering team can hold a date with a small deposit while the menu details get sorted, so there’s no need to have everything figured out before you reach out.

Early November is the ideal time to place Thanksgiving drop-off orders. Three to four weeks of notice gives you the full menu and your pick of delivery windows, though we can often accommodate orders on shorter notice too.

December still has plenty of possibilities, particularly on mid-week dates, which tend to stay open longer than weekends. Later requests may just mean choosing from a slightly smaller menu.

Wherever you are in your planning, it’s worth a quick call. Even if your date is close, we’ll see what we can do to help.

So Which One Should You Pick?

A short test that settles it for most people: on the day of the event, do you want to be a host or a guest?

If hosting is part of the fun, and your group is under forty or so, drop-off gives you restaurant-quality food at roughly a third of the cost. If you want to walk into your own party and just enjoy it, or you’re representing your company in front of employees and clients, full-service pays for itself so you can participate in the evening.

Either way, the food is the same: fresh, delicious, and chef-prepared in our own Miami kitchen. That part doesn’t change with the price.
